Pineapple Fried Quinoa

Pineapple Quinoa Ingredients:
Pineapple: Halved with fruit scooped out and chopped. Keep half of the pineapple shell for presentation
Quinoa: 2 Cups Cooked
Eggs: 3 Whole
Green Onion: 1 Stem, Sliced
Tomato: 1 Diced
Red Onion: 4 Slices, Diced
Frozen Green Peas: 1 Cup
Cilantro: 1 Small Bunch, Chopped
Garlic: 2 Cloves
Ginger: 1 Small Slice
Tamari: 3 Tbsp
Coconut Oil: 5 Tbsp
Olive Oil: 2 Tbsp
Lemon Zest: 2 Tbsp
Shrimp: Deveined, 8 Pieces
Cashew Nuts: Small Handful
Unsalted Vegetable Stock: 2 Cups

In a bowl mix 2 Tbsp of olive oil with 1 Tbsp of curry powder and 1 Tsp of lemon zest.
Marinade shrimp in mixture for 30 minutes.
Heat a pan with 1 Tbsp of coconut oil and fry red onion and tomato. Once they are cooked softly scramble eggs over veggies, break apart so there are many separate pieces, and set aside.
Defrost frozen peas in a wok or larger pan and set aside.
Cook shrimp in a larger pan for 3-5 minutes with 2 Tbsp of coconut oil and garlic. The shrimp is cooked when both sides turn pink and shrimp becomes rounder and more firm.  Set cooked shrimp aside.
Toss the cooked quinoa in the oiled pan from the shrimp with cilantro, green onion, green peas, and chopped pineapple. Pour in Tamari, 2 Tbsp of coconut oil, and 1 Tbsp of curry powder and keep frying.
Add shrimp, scrambled egg mixture, and cashew nuts. Keep frying until eggs and shrimp are mixed throughout the quinoa.
Turn off heat and scoop fried quinoa into the pineapple shell.
Garnish with cilantro and serve!

One less dish to wash at the end of the night!

Make A. Toast (Avocado Toast)

AvocadoToast Ingredients:
Avocado: 1 Whole
Gluten-Free Bread: 2 Slices
Olive Oil: 3 Tbsp
Sea Salt: Flake To Taste
Chili Flakes: To Taste
Lemon: 1/2 Juiced

Instructions:
Cut avocado in half and spoon out flesh into a bowl.
Mash avocado with a fork and add lemon juice.
Toast gluten-free bread.
Drizzle olive oil on bread.
Spread avocado mixture on toast.
Sprinkle with sea salt and chili flakes.

I think it’s time for us to have A. Toast!

Golden Eastern Shrimp

Curry_Cardamine_ShrimpIngredients:
Shrimp: 1 Lb, Deveined
Jasmine Rice: 2 Cups Cooked
Garlic: 3 Cloves
Cardamom Seeds: 1 Tbsp
Curry Powder: 2 Tbsp
Olive Oil: 1/4 Cup, enough to make paste to coat shrimp
Parsley: 1 Bunch
Lemon: 1 Tbsp of Zest and Juice (recommended)

Instructions:
Marinate shrimp in paste made out of olive oil, lemon zest, parsley, and curry for about an hour.
When ready to cook heat a shallow pan with olive oil and garlic.
When garlic is somewhat golden add cardamon seeds.
Add shrimp, cook moving shrimp around the pan frequently until done, once grey colour is gone and shrimp has turned pink.
Serve with Jasmine rice, garnish with a squeeze of lemon and parsley.

Warning do not wear white while cooking.
Enjoy!

Don’t Kale My Vibe Chips

ChiliLemonKaleChipsIngredients:
Kale: 2 Bunches, Stemmed And Torn
Extra-Virgin Olive Oil:  About 1/4 Cup, To Coat Kale
Flaky Sea Salt: To Taste
Lemon: 1, Juiced
Crushed Red Pepper Flakes: To Taste

Instructions:
Preheat the oven to 350 degrees F.
Place the kale in a large bowl and dress very lightly with olive oil so the leaves are barely coated and season with salt.
Spread the leaves out across 2 roasting sheet trays so they aren’t stacked on each other too much.
Roast in the oven until crispy but still green, 12 to 15 minutes.
Remove from the oven and dress with a squeeze of fresh lemon juice and a touch of crushed red pepper flakes.

Tilapia Tacos & Pineapple Salsa

AdrianneHo_TalapiaTaco I recently went to St. Barths for a shoot with The Coveteur and cooked for everyone while we were there. Here’s the recipe and video for the Tilapia Tacos and Pinapple Salsa I made one night. Enjoy!
Ingredients:
Talapia (or any fish you can find locally):  3 Fillets
Red Onion: 3 Tbsp, Chopped
Cilantro: 1 Handful Shreaded
Avocado: 1, Pitted and Chopped
Lemon/Lime: 1, Juiced
Garlic: 4 Cloves
Tomatos: 2, Diced
Olive Oil: 3 Tbsp
Sea Salt Flakes: To Taste
Fresh Ground Pepper: To Taste
Butter Lettuce: About 5-10 Leaves (More if you use as a wrap)
Gluten-Free Tortilla: Optional


Instructions:
Combine onion, cilantro, avocado, pineapple, and lime juice, sprinkle with sea salt, and set aside.
In a pan, heat oil and throw in garlic and cook until slightly brown.
Add tilapia fillets and cook for a few minutes on each side until it’s opaque throughout and flakes easily with a fork.
Squeeze lemon over it and season to taste with salt and pepper.
Set up stations with pineapple salsa, tomato, tilapia, whole wheat (or gluten-free) tortilla, cilantro to garnish, and butter lettuce.

If you want to go completely natural you can use butter lettuce as a wrap instead of a tortilla.

When I’m feeling a little under the weather I pick up Ginger Fireball from Juice Press. It contains oil of oregano, cayenne extract, ginger, lemon, and colloidal silver. The combination of the antimicrobial and the anti-inflammatory properties of the ginger, lemon, and orange are enough to burn the cold on sight!

If you’re just starting to feel the itching in your throat take 1-2 drops of oil of oregano under your tongue and wash down with water. Let the oil burn before watering it down for best results.
