Gluten-Free Zucchini Walnut Bread

Buckwheat flour: 2 cups
Baking powder: 2 tsp
Baking soda: ½ tsp
Eggs: 2 Whole, free range
Zucchini: 1 ¼ cup, grated
Almond milk: 1 cup
Flaxseeds: ½ cup
Walnuts: ½ cup, crushed
Black pepper: 1 tsp
Himalayan pink salt: 1 ½ tsp
Mixed dried mixed herbs: 1 tsp
Sesame seeds, poppy seeds (topping)

Instructions:
Preheat oven to 350*C. In a mixing bowl, combine flour, powder, soda, pepper and salt. In a separate bowl, combine eggs, almond milk and zucchini. Beat well. Combine wet ingredients with dry ingredients. Fold in the walnuts and flaxseeds. Pour mixture into a bread pan and top with sesame seeds and poppy seeds. Bake for 40 minutes. Cool bread on a cooling rack for 30 minutes before serving.

Smoked Salmon Toast To Go

Ingredients:
Ezekiel Bread: 2 Slices, toasted
Smoked Salmon: 4 Slices, chopped
Half Avocado: Sliced
Dill: 1 Tbsp, finely chopped
Crème Fraîche: 1/4 Cup
Red Onion: 2 Tbsp, minced
Sea Salt: To taste
Olive Oil: To taste
Lemon Juice: 1 Squeeze

To make the smoked salmon crème fraîche combine chopped onion, crème fraîche, dill, smoked salmon and a squeeze of lemon juice. Garnish with olive oil, dill, and set aside.
Slice half of the avocado, scoop out flesh, and sprinkle with sea salt. Set aside.
Layer avocado sliced over salmon crème fraîche mixture on top of ezekiel bread and enjoy. Pack all three parts of this recipe separately for the perfect on the go post-workout snack.

Cali Pink Salad

Pink Grapefruit: 2, Large
Pink Himalayan Salt: 1 1/2 Tsp
Dijon Mustard: 1 Tbsp
Freshly Squeezed Lemon Juice: 1/4 Cup
Freshly Ground Pepper: To Taste
Extra Virgin Olive Oil: 1/2 Cup
Avocado: 4, Ripe
Roasted Sunflower Seeds: A Sprinkle

Instructions:

Place the mustard, lemon juice, salt, and pepper in a small bowl. Slowly whisk in the olive oil until the mixture thickens into a vinaigrette.
Cut the avocados in half, remove the seeds, and carefully peel off the skin. Cut each half into 4 thick slices. Toss the avocado slices in the vinaigrette to prevent them from turning brown.
Cut the top and bottom off of the grapefruit, just enough to expose the flesh. Begin slicing off the peel, cutting from top to bottom, following the curve of the fruit until the whole peel is gone. Try to remove all of the white skin without sacrificing too much of the flesh of the fruit. Then release the grapefruit segments with a knife. Arrange the avocado slices around the edge of a large platter with the grapefruit segments in the center. Spoon the vinaigrette on top, sprinkle with salt, pepper, and sunflower seeds and serve.
